PIZZI PUGLIESI

Ingredients:

 

1 kg  of whole wheat flour

1 kg  of flour type "00"

Water (just for kneading)

60 gr. brewer's yeast

2 - 3 onions

120 gr. cherry tomatoes

1150 gr. black olives

olive oil

pepper in abundance

 

 

 

Melt the yeast in a small bowl in a bit  of quite warm water. On a surface place the flour and start to pour the yeast previously dissolved; little by little add some water, until the mixture is elastic and soft. Cover the mixture well and let it rise in a dry place for at least 2 hours.

 

Meanwhile, cut off coarsely chopped tomatoes and onion, add the black olives and chilli and cook everything in a pan with oil, adding salt.

 

Put the mixture into a bowl, add the filling by mixing all thoroughly, adding a little bit more oil .

 

When it is blended well, take a baking pan, flour it and helping you with your hands forming “little balls”. Bake them at 200 degrees for about 20 minutes.

 

Remove from oven and serve at the table. The “Pizzi” are good to eat hot or cold .
